I've gotten some good cookies from the cookie exchange. Here are some recipes for some really good ones!
White Chocolate with Raspberry Bars
1 c unsalted butter
4 c white chocolate chips
4 eggs
1 c sugar
2 c flour
1 t salt
2 1/4 t almond extract
10 oz jar seedless raspberry fruit spread, melted
1/2 c sliced almonds
Melt butter in saucepan over low heat. Remove from the heat. Add 2 c of the shite chocolate chips; do not stir. Beat the egss in a mixer bowl until foamy. Add the sugar gradually, beating at high speed until pale yellow. Stir in the white chocolate mixture. Add the flour, salt and almond extract. Beat at low speed until just combined. Spread 1/2 of the batter into a greased and floured 9 x 13 baking pan.
Bake at 325 for 15-20 min or until light brown. Spread the melted raspberry spread evenly over the baked layer. Stir the remaining 2 c white chocolate chips into the remaining batter. Spoon gently over the fruit. Sprinkle with the almonds. Bake for 30-35 min or until light brown. Cool completely before cutting into bars.

Gooey Butter Cookies
1 box butter recipe golden cake mix
1/4 t vanilla
1 stick butter (softened)
8 oz cream cheese (softened)
1 egg
powdered sugar
Mix all ingredients together. Drop by spoonful on cookie sheet. Sprinkle with powdered sugar. Bake at 350 for 10-12 min, then sprinkle with sugar again.
